I hope you all had a healthy and “Happy Valentine’s Day!”  I spent a beautiful afternoon with my awesome neighbors Keith and Marissa!  We had a “Gl-Airy Free” lunch, and hours of great conversation.  I made a very quick chicken stir fry that turned out delicious!  It was all done in about 15 minutes!  Keith and Marissa are two of the most genuine, caring people, and I feel so blessed to call them my friends, and my neighbors!

Today I “threw” together a Flounder Stir Fry using veggies that I had boiled this morning for my breakfast!  I used 1 organic egg, and gluten free bread crumbs to coat the flounder, and fried it in olive oil.  Once the fish was done, I took it out of the pan, and set it aside.  Next, in the same pan, I sautéed one clove of garlic, and when it was light brown, I put my leftover veggies into the frying pan with olive oil, along with the egg that was left over from dipping the fish for coating.  I used fresh, organic brussel sprouts, dandelion, sugar snap peas,(I did not boil these, just stir fried them), green cabbage, baby carrots, and parsnip.  I added about 1/8 teaspoon of dried mustard, and 1/8 teaspoon of celery seed, sea salt, and pepper to taste.

I flaked the flounder over the veggies, and enjoyed a very healthy, colorful, yummy, “Gl-Airy Free” lunch!


Last week, I visited my best friend, Vicky, and we made a “Gl-Airy Free” chicken stir fry together for lunch.  In our stir fry dish, we added sesame seeds, and gluten free soy sauce.  We also added in yellow squash, red bell peppers, and onions.  Add in any spices that you like.  This is a “Healthy and Eas-E” dish with a number of variations that you can create according to your taste.  Remember to always use NATURAL, ORGANIC INGREDIENTS!


For an absolutely delicious, “healthy and eas-e” meal, visit Nature’s Pantry in New Windsor, N.Y.  This store has everything, and is my new favorite supermarket!  I find all of my organic health needs here, and the staff are so pleasant, friendly and helpful!  I enjoyed an awesome dinner the other night of  Vegan Spinach Noodle, Edamame Salad, and the most amazing Vegan Sprouted Brown Rice/Sprouted Quinoa Sushi!
